The culinary lineup, straight from our grow rooms — how each mushroom cooks, and what it loves to be next to.
Shiitake
Lentinula edodesRich, umami-packed flavor. Great for grilling, roasting, stir-fries, broths, and risottos. Pairs well with garlic, ginger, soy sauce, mirin, sesame oil, and noodles.
Lion’s Mane
Hericium erinaceusButtery and tender — great seared like scallops, in soups, or shredded for crab cakes and tacos. Pairs well with butter, garlic, thyme, miso, lemon, and creamy sauces.
Oyster
Pleurotus spp.Tender and delicate with a silky texture. Perfect for stir-fries, soups, sautéing, or as a vegan “pulled pork.” Pairs well with garlic, shallots, white wine, lemon, cream, and thyme. We grow five different types of oysters: Blue Oyster, Black Pearl Oyster, Italian Oyster, Golden Oyster and Pink Oyster — ask us which we think would be best for your needs.
King Trumpet
Pleurotus eryngiiMeaty and satisfying — perfect for searing, grilling, roasting, or slicing into “scallops.” Great in stir-fries, pastas, and plant-based dishes. Pairs well with garlic, thyme, lemon, miso, soy sauce, and olive oil.
Chestnut
Pholiota adiposaSweet and aromatic with a warm, mild, cinnamon-like flavor. Great in stir-fries, soups, sautés, and rice or grain dishes — it keeps its crispness over high heat. Pairs well with garlic, ginger, scallions, tamari, sesame oil, and leafy greens.
Beech (Shimeji)
Hypsizygus tessellatusDelicate and slightly crunchy, with a mild, nutty flavor. Great in soups, stir-fries, sautés, and grain bowls. Pairs well with miso, ginger, scallions, sesame oil, and light sauces.
Maitake
Grifola frondosaEarthy and rich. Great in soups, stir-fries, risottos, or roasted whole for a hearty centerpiece. Pairs well with soy sauce, garlic, ginger, miso, brown rice, and greens.
Golden Enoki
Flammulina velutipesDelicate and slightly crisp. Great in soups, hot pots, stir-fries, or simply grilled. Pairs well with miso, dashi, ponzu, scallions, tofu, and sesame.
Pioppino
Agrocybe aegeritaFirm and velvety, with a deep, nutty, savory flavor. Holds its bite in pastas, risottos, braises, and sautés. Pairs well with butter, garlic, white wine, thyme, cream, and fresh pasta.
